Waterfront Airport Hotel and Casino’ Café Uno, located in Cebu’s Mactan Island, serves Filipino and international cuisines from breakfast to dinner. Café Uno serves a buffet of signature Filipino dishes, savory specialties and season-inspired dishes. In between meals, they also serve a la carte menu of fresh salad, beverages and desserts.
Joining Café Uno in offering delectable and mouth-watering dishes are three other restaurants in Waterfront Mactan including Café Fortuna, Lobby Lounge and Korean Town. Café Uno’s executive Chef Uyung Al Wazir and Demi-Chef Reinerio S. Hibaya introduced to us their Pork Duo dish, a mix of butter fried pork belly and grilled chops served with turmeric rice (yellow rice), eggplant salsa, pork liver sauce and kangkong (water spinach). The pork belly is deep fried with onions, butter, egg, flour and corn starch while the chops are marinated in salt and pepper before grilling. The turmeric rice, also called yellow rice, uses luyang dilaw (ginger) which is known to have health benefits. All ingredients used are grown in Cebu. The eggplant condiment is grilled and flavored with onions, tomato, ginger and vinegar. Pork Duo is also served a la carte at the hotel casino’s Café Fortuna, and is also available for room service to their hotel customers. January Leron, marketing communications officer of Waterfront Mactan is now in the process of standardizing their menu as well as to integrate with Waterfront Hotel & Casino in Cebu for a more uniform list of dishes. Café Uno is also home to the all-time favorite pork adobo, bistek tagalog, curry, bulalo and sinigang. These Filipino comfort dishes, plus a complete line up of sought-after Cebuano delicacies, drive throngs of balik-bayans and tourists to Waterfront Mactan during the Sinulog Festival month.
