Ramen places is now common here in Cebu and these places are often visited by younger generations are part of their love of ramen and their food trips. Located in AS Fortuna, the food strips here are growing exponentially with rise of coffee shops and restaurant, and Hamakaze Cebu Japanese restaurant is one those establishments.
Owned by a Japanese national, he established Hamakaze here in Cebu as one of his 12 restaurants around the globe. Hamakaze restaurant started on December 2015. Located along AS Fortuna Road, across Jollibee.
The place is not that big but enoguh to accomodate 20-25 persons. Similar to authentic Japanese restaurants , you can see seats across the food preparation place where you can see how the food was prepared and serve right in front of you when its ready.
There menu mainly consists of Ramen which is also their specialty dish.The unique about their noodles is that they use collage soup.
Collagen – the protein that comprises most of the connective tissue when heating bones in water dissolving them into solution and simmering process also catalyzes a few other reactions
They say the the collagen soup takes almost 12 hours to make just to get all the flavor into the soup and into the ramen. I got the chance to taste it and it was out of this world , the flavor just harmoniously blend with the soup with just a sip. You can definitely tell that it has all the ingredients mixed together to create that very delicious taste.
They also have this ramen where it is separated from the soup (dry ramen) and you have the option to mixed the ramen into the soup yourself if you prefer more noodles than the soup which is actually the first time I’ve tried.
They also have this ramen which is not hot in nature and is served only during lunch where it is hot and humid. This ramen called Tsukumen where it is a Cold noodle with toppings, side chicken collagen soup and dip.
Order the Zaru Ramen if you prefer soy sauce as deep which is equally delicious and tasty.
Aside from ramen they also have other dishes as well. One of my favorite the Chicken Karaage which is a soy sauce fried Chicken.
Then the popular Japanese appetizer Gyoza , a Japanese Pan-Fried Dumplings is also available.
The chicken Katsu rice where Japanese curry rice is also a must try.
They also serve imported Japanese beers like Asahi which is very popular in Japan and Kirin Ichiban.
It is best of visit here with your family and friends and just enjoy real Japanese food goodness.

Overall it is as good as many Japanese restaurants here in Cebu, the unique thing is that they serve this collagen ramen which is very new to me but also very tasty .The cold noodle ramen is a unique addition and also perfect for the climate here which is mostly hot. Location is also very accessible along the road (AS Fortuna). Great for family and group of friends who wants to try out new Cebu Japanese restaurants especially ramen.
